We know spring is almost here, but it's still a little bit too chilly to have a green smoothie for breakfast yet. I was so glad when I found an easy vegetable soup recipe from vegetarian cook Anna Jones just in time. This is a healthy & hearty recipe using very simple ingredients. Anna also shows three different ways so one batch is good throughout the week without getting tired of it. BUTTERNUT SQUASH SOUP (6 servings) 1 onion 2 carrots 2 garlic cloves 1 tablespoon of fresh thyme 1 tablespoon of cumin seeds 1 tablespoon of fennel seeds 2 sweet potatoes 1/2 butternut squash A pinch of salt A pinch of pepper 2 handfuls of spinach 1 pack of vegetable stock 1.Chop the onion and carrots and slice the garlic. Drizzle some olive oil in a pot on a medium heat and then put carrot and garlic on a medium heat. Give it a few good stir. Pick the fresh thyme leave from it's stem and put it in the pot. Pop in cumin seeds and fennel seeds as well. 2.While the onion mixture is being cooked, peel the sweet potatoes and cut them into cubes. Chop the butternut squash about the same size. Put the sweet potatoes and butternut squash in the pot. Pop in a good pinch of salt and pepper. 3.Pour the vegetable stock in and leave that to simmer on a medium heat for 20-30mins until the vegetable has cooked through. When the sweet potatoes and butternut squash cubes are starting to break down, stir in the spinach. Add-on suggestions 1.Chunky- Through some beans and top off with fried sage leaves 2.Creamy and grainy - Blend it nice and creamy and add some cooked brown rice and plain greek yogurt 3.Creamy and spicy - Drizzle thyme and chilly oil on the blended soup. I liked no.2 + a poached egg as some extra protein :) Enjoy!

I reunited with one of my favorite brazilians from Disney ICP, had the most delicious donut in my life and flew to Las Vegas for the biggest accessories show.February wasn't bad at all but I am excited to have a little more sunny & warmer days in March!

My favorite meal of a day is breakfast. Especially on weekends, I just love making good breakfast at home for my Mr.and myself. Seriously there's nothing better than french toast with some fresh fruit in the morning! This classic french toast recipe I've been trying at least once a week for I don't remember how many week is really is so good. The ingredients I listed below is for 2servings.

(2 servings/6 pieces)
1/3 cup of Milk
Whole Wheat French Bread (or White French Bread, thick sliced)
2 tablespoon Sugar
A pinch of Salt
1/2 teaspoon Vanilla extract
A pinch of cinnamon powder(Optional)
4 tablespoon Butter
4 tablespoon Coconut oil (Optional,Any kind of vegetable oil)
Honey(or Maple syrup),as desired
A handful of Strawberries (Cut in halves)
1.Whisk together the eggs,milk,sugar,salt,vanilla extract and cinnamon in a large shallow bowl.
2.place each slice of bread into the egg mixture. Allow the bread to soak in some of it. turn them over and give another minute or two for the other side to soak in as well.
3.Melt half of the butter and coconut oil in a large fry pan over medium high heat. Place the bread slices onto the hot fry pan. Fry the french toast until they look GBD(Golden-Brown-Delicious). Put the other half of the butter and coconut oil, then flip and brown the other side.
