We know spring is almost here, but it's still a little bit too chilly to have a green smoothie for breakfast yet. I was so glad when I found an easy vegetable soup recipe from vegetarian cook Anna Jones just in time. This is a healthy & hearty recipe using very simple ingredients. Anna also shows three different ways so one batch is good throughout the week without getting tired of it.

(6 servings)
1 onion
2 carrots
2 garlic cloves
1 tablespoon of fresh thyme
1 tablespoon of cumin seeds
1 tablespoon of fennel seeds
2 sweet potatoes
1/2 butternut squash
A pinch of salt
A pinch of pepper
2 handfuls of spinach
1 pack of vegetable stock

1.Chop the onion and carrots and slice the garlic. Drizzle some olive oil in a pot on a medium heat and then put carrot and garlic on a medium heat. Give it a few good stir. Pick the fresh thyme leave from it's stem and put it in the pot. Pop in cumin seeds and fennel seeds as well.

2.While the onion mixture is being cooked, peel the sweet potatoes and cut them into cubes. Chop the butternut squash about the same size. Put the sweet potatoes and butternut squash in the pot. Pop in a good pinch of salt and pepper. 

3.Pour the vegetable stock in and leave that to simmer on a medium heat for 20-30mins until the vegetable has cooked through.
When the sweet potatoes and butternut squash cubes are starting to break down, stir in the spinach.

Add-on suggestions
1.Chunky- Through some beans and top off with fried sage leaves
2.Creamy and grainy - Blend it nice and creamy and add some cooked brown rice and plain greek yogurt 
3.Creamy and spicy - Drizzle thyme and chilly oil on the blended soup.

I liked no.2 + a poached egg as some extra protein :)
